Deli paper has to do three things: hold a sandwich without falling apart, resist grease and moisture for at least 20 minutes, and not stick to the food. Quilon (silicone-coated) deli paper handles all three and is what most national sandwich chains use under the hood. For lighter applications — bakery items, dry sandwiches, cookies — uncoated greaseproof or dry-waxed paper is enough and prints with more vibrant colors than coated stock.
